Je ne suis d\u2019ailleurs pas sp\u00e9cialement adepte des alternatives : substituts de beurre, substituts d\u2019oeuf, substituts\u00a0de sucre &#8230;. Cela m\u2019arrive d\u2019utiliser ce type d\u2019ingr\u00e9dients mais j\u2019aime aussi me raprocher des recettes traditionnelles<\/p>\n<p>En voici un exemple, de vrai sabl\u00e9s comme on les aime avec des ingr\u00e9dients simples et une petite originalit\u00e9 : la farine de petit \u00e9peautre. Tr\u00e8s facile \u00e0 se procurer en magasin bio, je l\u2019ai choisie compl\u00e8te.<\/p>\n<p>Le petit \u00e9peautre est l\u2019anc\u00eatre du bl\u00e9. C\u2019est une vari\u00e9t\u00e9 non hybrid\u00e9e, donc l\u2019un des rares aliments qui se trouve sous sa forme originelle. Son atout principale est sa faible teneur en gluten. Il est beaucoup mieux tol\u00e9r\u00e9 de ce fait que les farines de bl\u00e9 habituelles.
