Le biscuit peut aussi \u00eatre cuit dans un moule \u00e0 cake ou rond et on obtiendra ainsi une g\u00e9noise que l\u2019on pourra fourrer avec la pr\u00e9paration de son choix.<\/p>\n<p><strong>Ingr\u00e9dients\u00a0:<\/strong><!--more--><\/p>\n<p><span style=\"text-decoration: underline;\">Biscuit sans gluten<\/span><br \/>\n\u2022 4 \u0153ufs<br \/>\n\u2022 210g de sucre blond<br \/>\n\u2022 1 pinc\u00e9e de sel<br \/>\n\u2022 2 cuil. \u00e0 soupe de jus de cl\u00e9mentine<br \/>\n\u2022 10 g d\u2019huile de coco<br \/>\n\u2022 80 g de farine de riz<br \/>\n\u2022 80 g de f\u00e9cule de ma\u00efs<br \/>\n\u2022 1\/2c. \u00e0 caf\u00e9 de bicarbonate de soude alimentaire<\/p>\n<p><span style=\"text-decoration: underline;\">Sirop<\/span><br \/>\n\u2022 50g sucre<br \/>\n\u2022 200g d\u2019eau<br \/>\n\u2022 Le jus d\u20191 cl\u00e9mentine<br \/>\nCr\u00e8me de marron<br \/>\n\u2022 400g de pur\u00e9e de marron nature<br \/>\n\u2022 80 g de sucre glace<br \/>\n\u2022 60g d\u2019huile de coco<br \/>\n\u2022 Le jus et zeste d\u2019une cl\u00e9mentine<\/p>\n<p><span style=\"text-decoration: underline;\">D\u00e9coration\u00a0:<\/span><br \/>\n\u2022 2 cl\u00e9mentines avec des feuilles (pour la d\u00e9coration).<br \/>\n\u2022 Coco r\u00e2p\u00e9e<br \/>\n\u2022 Cacao en poudre<br \/>\n\u2022 Sucre glace<\/p>\n<p><span style=\"text-decoration: underline;\">Pr\u00e9paration\u00a0:<\/span><br \/>\nLe biscuit\u00a0:<br \/>\nAllumer le four \u00e0 200\u00b0<br \/>\nFaire fondre l\u2019huile de coco<br \/>\nS\u00e9parez les blancs des jaunes,<br \/>\nBattre au fouet \u00e9lectrique assez longuement sucre + jaunes afin que le sucre soit bien fondu,<br \/>\nAjouter l\u2019huile, le jus et le zeste finement r\u00e2p\u00e9 d\u2019une cl\u00e9mentine,<br \/>\nM\u00e9langer ensemble, \u00e0 part, les farines et le bicarbonate<br \/>\nMonter les blancs en neige avec la pinc\u00e9e de sel<br \/>\nAjouter progressivement au m\u00e9lange sucre\/\u0153ufs la farine, en alternant avec la moiti\u00e9 des blancs en neige. M\u00e9langer vigoureusement \u00e0 chaque fois avec une cuill\u00e8re en bois.<br \/>\nFinir avec les blancs en neige restant en m\u00e9langeant cette fois d\u00e9licatement pour obtenir une pr\u00e9paration l\u00e9g\u00e8rement gonfl\u00e9e.<br \/>\nVerser sur une plaque rectangulaire tapiss\u00e9e de papier cuisson. Bien r\u00e9partir la pr\u00e9paration de mani\u00e8re uniforme.<br \/>\nBaisser le four \u00e0 180\u00b0 et cuire 15 \u00e0 20mn, la p\u00e2te doit \u00eatre dor\u00e9e et bien gonfl\u00e9e.<\/p>\n<p><span style=\"text-decoration: underline;\">Le sirop\u00a0:<\/span><br \/>\nPendant ce temps pr\u00e9parer le sirop\u00a0:<br \/>\nMettre dans une casserole eau + sucre, m\u00e9langer et porter \u00e0 \u00e9bullition pendant 3 mn<br \/>\nAu bout de ce temps ajouter le jus d\u2019une cl\u00e9mentine.<\/p>\n<p><span style=\"text-decoration: underline;\">La cr\u00e8me de marron\u00a0:<\/span><br \/>\nFaire fondre l\u2019huile de coco,<br \/>\nBattre au fouet \u00e9lectrique la pur\u00e9e de marron avec le sucre glace assez longuement,<br \/>\nAjouter l\u2019huile de coco et le jus et zeste d\u2019une cl\u00e9mentine petit \u00e0 petit, bien battre encore quelques instants.<\/p>\n<p><span style=\"text-decoration: underline;\">Montage\u00a0:<\/span><br \/>\nD\u00e9coller le papier cuisson d\u00e9licatement, et remplacez le par un papier de cuisson neuf.<br \/>\nAvec un pinceau bien imbiber l\u2019ensemble du biscuit de sirop. Cette \u00e9tape est la cl\u00e9 de la r\u00e9ussite. Ne pas h\u00e9siter \u00e0 bien l\u2019humidifier.<br \/>\nEtaler uniform\u00e9ment Les 2\/\u00a03 de la cr\u00e8me de marron,<br \/>\nRouler d\u00e9licatement le biscuit sur lui \u2013 m\u00eame en vous aidant du papier cuisson<br \/>\nFormer un beau rouleau et enveloppez le bien en serrant avec le papier<br \/>\nLaisser au frais pour au moins 1h<\/p>\n<p><span style=\"text-decoration: underline;\">D\u00e9coration\u00a0:<\/span><br \/>\nDans le reste du sirop disposer 4 moiti\u00e9s de cl\u00e9mentine, c\u00f4t\u00e9 tranch\u00e9 contre le fond de la casserole.<br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-201 alignleft\" src=\"http:\/\/almanachnaturo.fr\/wp-content\/uploads\/2017\/12\/buchvintage-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/almanachnaturo.fr\/wp-content\/uploads\/2017\/12\/buchvintage-300x225.jpg 300w, https:\/\/almanachnaturo.fr\/wp-content\/uploads\/2017\/12\/buchvintage-768x576.jpg 768w, https:\/\/almanachnaturo.fr\/wp-content\/uploads\/2017\/12\/buchvintage-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/>Faire l\u00e9g\u00e8rement fr\u00e9mir le sirop et les fruits jusqu\u2019\u00e0 ce qu\u2019ils se nappent de sucre un peu comme des fruits confits. Attention \u00e0 bien surveiller cela peut br\u00fbler rapidement.<br \/>\nAu bout de temps disposer la b\u00fbche sur un plat de service,<br \/>\nRecouvrez l\u00e0 du reste de la cr\u00e8me, on peut couper les extr\u00e9mit\u00e9s pour figurer les n\u0153uds d\u2019une buche de bois.<br \/>\nGarder au frais.<br \/>\nAu moment de servir, d\u00e9corer avec de la noix de coco et du cacao en poudre, sucre glace, disposer les cl\u00e9mentines refroidies et des feuilles de cl\u00e9mentines.<\/p>\n<p><strong>Conseils\u00a0<\/strong>: M\u00eame si le biscuit se craqu\u00e8le au moment du roulage, la cr\u00e8me de marron par &#8211; dessus masquera le d\u00e9faut. On peut utiliser de la cr\u00e8me de marron d\u00e9j\u00e0 sucr\u00e9e dans ce cas m\u00e9langer directement avec huile de coco et jus de cl\u00e9mentine sans ajouter le sucre glace.
